Macaroni and Cheese


So a few months back I had a bad experience with boxed macaroni and cheese. For some reason it just made my stomach churn and caused me to vomit. I know you all wanted to know that. Anyway, since then I haven't been able to eat boxed mac n cheese. While it's not a staple in my diet, it's a yummy comfort food now and then. So last night I had a dilemma, I wanted some macaroni and cheese but couldn't quite stomach making a box of it so I went searching for a recipe and this is what I came up with. Let me tell you it was delicious and easy. It's just a basic white sauce with cheese melted in and tossed with noodles. Easy-cheesy! I don't know if I'll ever go back to the fake stuff again.

Ingredients
2 cups Dried Macaroni or Shells
1 Egg Beaten

2 TBSP Butter

2 TBS Flour

1 1/4 cups Milk

1 teaspoons (heaping) Dry Mustard

1/2 pound Cheddar Cheese, Grated

1/4 teaspoons Salt

1/4 teaspoons Seasoned Salt

1/4 teaspoons Black Pepper

Optional Spices: Cayenne Pepper, Paprika, Thyme, Garlic Powder

Instructions
Cook macaroni until very firm. Macaroni should be too firm to eat right out of the pot. Drain.
In a small bowl, beat egg. Set aside for later use.
In a large pot, melt butter and sprinkle in flour. Whisk together over medium-low heat. Cook mixture for five minutes, whisking constantly. Pour in milk, add mustard, and whisk until smooth. Cook for five minutes until very thick. Reduce heat to low.
Take 1/4 cup of the sauce and slowly pour it into beaten egg, whisking constantly to avoid cooking eggs. Whisk together till smooth.
Pour egg mixture into sauce, whisking constantly. Stir until smooth.
Add in cheese and stir to melt.
Add salt and pepper. Taste sauce and add more salt and seasoned salt as needed!
Pour in drained, cooked macaroni and stir to combined. Serve immediately!

My camera has a 'food' setting... since you have the same, but newer, camera, you should check it out! Also, I'd bet there's a "how to" on food pictures :)
