Is there anything more scrumptious than crepes??
Today I had an undeniable urge to make something delicious and this idea just wouldn't leave me. I wanted to make a savory crepe, but didn't want to go to the grocery store for anything. Enter Crepes a la Chicken Florentine. I must say these turned out quite wonderful especially considering I kind of winged it after checking out a few recipes. The crepes were delicious and the sauce was creamy and savory. The best part is that the extra crepes magically turned into dessert crepes with the addition of jam and Nutella.
makes 12 small crepes
1 c flour
1 c milk
4 eggs
1/4 tsp salt
1 TBSP melted butter
Whisk all ingredients together until well combined. Melt 1/2 TBSP butter in non-stick pan over medium-high heat. Pour in 1/4-1/3 c batter, depending on the size of your pan. Promptly swirl batter around in pan so that it spreads all the way around the bottom of the pan. Cook for about 1 minute until the edges are dry and curl up slightly and the bottom side is lightly browned (check by lifting edges). Flip crepe using a rubber scraper or thin spatula. Cook for 15-30 seconds more. Remove from pan and store covered in warm oven until ready to serve. Add more butter to pan every other or every third crepe, or when the crepes begin to stick to the pan.
Chicken Florentine Filling
3 TBSP butter
3 TBSP flour
1 c milk
1 c chicken broth (or water+chicken bouillon)
3/4 -1 c shredded cheddar cheese (or swiss)
2 cloves garlic, minced
1 small onion, diced
1 chicken breast, diced
3/4 c frozen spinach, thawed and drained
Salt and pepper to taste
Melt 1 TBSP butter in saucepan. Saute garlic and onion, until soft then add chicken and saute until fully cooked. Mix in spinach. Pour contents into bowl and set aside. Add remaining 2 TBSP butter to saucepan and melt over medium-high heat. Whisk in flour and mix. Cook for a minute or two. Add milk and chicken broth. Bring mixture to boil, whisking regularly until thickened. Add more liquid if needed. Add in chicken/vegetable mixture and cheese. Stir until cheese is melted. Taste then season with salt and pepper as needed. Serve in rolled crepes.

Sounds scrumptious! Relatively straight forward, but definitely yummy =) I may have to try something like unto it one of these nights and wow your siblings and father...Thanks for inspiring me! (and it should look very appetizing on my new plates!)
